Finally took the plunge into making homeade angel food cake with my duck eggs! Duck eggs are great for baking as they contain more egg whites than chicken eggs…and since angel food cake is nothing but egg whites, seems like the perfect egg to use! It didn’t turn out quite as tall as I wanted, more beating of eggs next time, but it was very moist and quite tasty (better than store bought for sure!). I did make two, one is sugar and gluten free, the other (slightly darker) is “normal.”
